Restaurant owners aim for safe, attractive indoor dining experience

Now that Oregon’s most populous counties can resume indoor dining, many restaurants are working hard to attract customers inside while minimizing the risk of exposure to the coronavirus. In Bend, Riane Welch and her fiancé are reopening their Boxwood Kitchen dining room. The small restaurant, like many others in the state, has struggled to stay afloat over the last year, trying everything from takeout and delivery to maximizing outdoor seating. Nevertheless, it has had to close for extended periods since the pandemic shutdowns began in March 2020. Riane Welch tells us about how the first weekend of indoor dining went and what she’s planning for the future.
